Method
 

  1. Combine 1/2 cup all-purpose flour, 1/2 tablespoon sugar, 1/2 teaspoon baking powder, and a pinch of salt in a small mixing bowl.
  2. Melt 1/4 tablespoon unsalted butter in a small heat-safe bowl in the microwave for 10 seconds.
  3. Pour 1/2 cup whole milk into the melted butter and stir in 1/4 teaspoon vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir with a fork until just combined, leaving small lumps, about 30 seconds.
  5. Let the batter rest for 2 to 3 minutes to allow the baking powder to activate.
  6. Heat an 8-inch nonstick skillet over medium heat and add a small knob of butter; heat until foaming and sizzling.
  7. Pour half of the batter into the center of the skillet and cook for 2 to 3 minutes, until bubbles form on the surface and edges look set.
  8. Flip the pancake and cook for an additional 1 to 2 minutes until golden brown.
  9. Transfer the cooked pancake to a plate and repeat with the remaining batter following the same cooking times.
