- Wash and pat dry two or three fresh lemons, then use a microplane zester to remove just the yellow outer peel until you have 2 tablespoons of zest.
- Spread the lemon zest on a plate or cutting board and let it air dry at room temperature for 30 to 60 minutes.
- Measure and combine 1 tablespoon kosher salt and 2 teaspoons freshly cracked black peppercorns in a small mixing bowl.
- Add 1 teaspoon garlic powder and 1/2 teaspoon onion powder to the bowl and stir to combine.
- Add the dried lemon zest to the bowl, breaking up any clumps so it mixes evenly with the spices.
- If using heat, add 1/4 teaspoon red pepper flakes to the mixture and stir to incorporate.
- Stir all ingredients together for at least 1 minute until evenly distributed and no streaks of zest or clumps remain.
- Transfer the seasoning blend to an airtight container or small glass jar, seal tightly, and store in a cool, dark place for up to 3 to 4 months.
