Ingredients

Main
  • 10 fresh jalapenos chopped
  • 4 cloves garlic minced
  • 2 cups water filtered or distilled
  • 1 tablespoon salt non-iodized
  • 1 tablespoon vinegar optional, for added tang

Equipment

  • Glass jar with lid
  • Blender or food processor
  • Measuring cups and spoons
  • Non-metallic stirring utensil
  • Cheesecloth or coffee filter (optional)

Method

  1. Start by thoroughly washing the jalapenos and garlic to remove any dirt or bacteria.
  2. Chop the jalapenos into small pieces.
  3. In a blender, combine the chopped jalapenos, minced garlic, salt, and water. Blend until smooth to create a thick paste.
  4. Pour the blended mixture into a clean glass jar, leaving about an inch of headspace at the top.
  5. Seal the jar loosely with the lid or cover it with cheesecloth.
  6. Place the jar in a cool, dark place for 5 to 7 days, checking daily for bubbles.
  7. After a week, taste the sauce to check for desired tanginess.
  8. Once fermented, blend the sauce again for a smooth consistency and transfer it to a clean bottle for storage.

Notes

This sauce is versatile and can be used to enhance a variety of dishes such as tacos, stews, and marinades.
