Ingredients
  

Main
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 to 2 teaspoons chili oil adjust to taste
  • 2 cloves garlic minced finely
  • 1 teaspoon fresh ginger minced finely
  • 1 tablespoon green onion sliced thin (optional garnish)
  • 1/2 teaspoon white sugar optional, balances acidity

Method
 

  1. Mince the garlic and ginger as finely as possible and measure all liquids before starting.
  2. Pour 3 tablespoons rice vinegar into a small mixing bowl.
  3. Add 3 tablespoons soy sauce to the bowl and stir to combine.
  4. Whisk in 1 tablespoon sesame oil vigorously for about 10 seconds to emulsify.
  5. Stir in 1 teaspoon chili oil, taste, and adjust heat as desired.
  6. Fold in the minced garlic and ginger and stir for about 20 seconds to distribute evenly.
  7. Taste the sauce and adjust balance by adding more sugar, vinegar, or chili oil one small element at a time.
  8. Stir in sliced green onion if using and let the sauce rest for 2 to 3 minutes before serving.

Notes

Store in a glass jar in the refrigerator for up to three weeks; stir before each use.
