Ingredients

Main
  • 1 cup yellow split peas
  • 4 cups vegetable broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Equipment

  • Large pot or saucepan
  • Wooden spoon for stirring
  • Measuring cups and spoons
  • Colander for rinsing peas
  • Cutting board and knife

Method

  1. Start by rinsing the yellow split peas under cold water to remove any dust or impurities.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion, carrot, and garlic, and sauté until softened, about 5 minutes.
  4. Stir in the cumin and turmeric, allowing them to bloom in the oil for about 1 minute.
  5. Add the rinsed yellow split peas and vegetable broth to the pot.
  6. Increase the heat and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, stirring occasionally.
  8. After 30 minutes, check the peas; they should be tender and creamy. If they are still firm, cook for an additional 5-10 minutes.
  9. Once cooked, season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

For extra creaminess, blend a portion of the cooked peas and stir them back into the pot. This recipe is naturally gluten-free and vegan.
