Ingredients

Main
  • 4 venison steaks about 6 ounces each
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh rosemary chopped (or 1/2 teaspoon dried)
  • 1 teaspoon fresh thyme chopped (or 1/2 teaspoon dried)
  • 1 tablespoon butter

Equipment

  • Cast iron skillet or grill
  • Tongs
  • Meat thermometer
  • Cutting board
  • Sharp knife

Method

  1. In a small bowl, combine olive oil, minced garlic, salt, pepper, rosemary, and thyme to create the marinade.
  2. Coat the venison steaks with the marinade and let them sit for at least 15 minutes at room temperature.
  3. Heat your cast iron skillet or grill over medium-high heat.
  4. Place the marinated steaks in the hot skillet or on the grill and sear for about 4-5 minutes on each side for medium-rare.
  5. During the last minute of cooking, add butter to the skillet and spoon it over the steaks.
  6. Use a meat thermometer to check for doneness, aiming for 130°F for medium-rare.
  7. Remove the steaks from the heat and let them rest for 5-10 minutes.
  8. Slice the steaks against the grain and serve with your favorite sides.

Notes

Resting the steaks after cooking enhances juiciness and flavor.
