Method
- Combine 1 cup water and 1 cup granulated sugar in a small saucepan.
- Place the saucepan over medium heat and let it warm without stirring for about 2 minutes.
- After 2 minutes, gently stir the mixture for about 1 minute until all the sugar fully dissolves and the syrup is clear and glossy.
- Continue heating until you see tiny bubbles form around the edges of the saucepan, bringing the syrup to a gentle simmer.
- Remove the saucepan from heat immediately to prevent overcooking.
- Stir in 1 1/2 teaspoons pure vanilla extract while the syrup is still warm to evenly infuse the flavor.
- Pour the syrup into a clean glass jar and let it cool to room temperature, about 30 minutes.
- Seal the jar with a tight-fitting lid and refrigerate. The syrup will thicken slightly as it cools.
Notes
Pro Tip: If your vanilla simple syrup crystallizes during storage, gently heat it over low heat for 1–2 minutes while stirring, then let it cool completely before resealing.
