Ingredients

Main
  • 1 cup sweet rice flour
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup ube puree
  • 1 tablespoon coconut milk
  • 1/4 cup cornstarch

Equipment

  • Mixing bowl
  • Steamer or pot with a steaming rack
  • Rubber spatula
  • Measuring cups and spoons
  • Square or rectangular pan
  • Plastic wrap

Method

  1. Prepare your steamer by filling it with water and bringing it to a gentle boil.
  2. In a mixing bowl, combine the sweet rice flour, granulated sugar, ube puree, and coconut milk.
  3. Gradually pour in the water while stirring to prevent lumps.
  4. Grease your square or rectangular pan lightly, then pour the batter in evenly.
  5. Place the pan in the steamer and cover it with a lid. Steam for about 30 minutes, or until the mochi becomes firm.
  6. Carefully remove the pan from the steamer and let it cool for about 10 minutes before handling.
  7. Dust a clean surface with cornstarch to prevent sticking, then cut the mochi into bite-sized pieces.

Notes

Ube Mochi is delightful on its own or can be served with fresh fruit or a scoop of ice cream.
