Ingredients

Main
  • 2 cups glutinous rice
  • 2 cups water
  • 1 cup ube purple yam, cooked and mashed
  • 1 can 400 ml coconut milk
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract optional

Equipment

  • Large pot
  • Mixing bowl
  • Spatula
  • 9x9 inch baking dish
  • Steamer or bamboo basket

Method

  1. Rinse the glutinous rice under cold water until the water runs clear.
  2. Soak the rice in water for about 4 hours or overnight.
  3. In a large pot, combine the soaked rice and 2 cups of water. Bring to a boil, reduce to low heat, cover, and simmer for about 25 minutes.
  4. In a mixing bowl, combine the mashed ube, coconut milk, sugar, salt, and vanilla extract.
  5. Once the rice is cooked, gently fold it into the ube mixture until well combined.
  6. Grease a 9x9-inch baking dish and spread the rice mixture evenly.
  7. Set up a steamer or bamboo basket and place the baking dish inside. Steam for about 20 minutes until heated through and firm.
  8. Let the biko cool completely before slicing into squares.

Notes

For a richer flavor, top your Ube Biko with toasted coconut flakes before serving.
