Ingredients

Main
  • 4-5 pounds turkey breast
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon dried thyme

Equipment

  • Smoker
  • Meat thermometer
  • Wood chips (hickory or applewood recommended)
  • Aluminum foil
  • Sharp knife for slicing

Method

  1. Rinse the turkey breast under cold water and pat it dry with paper towels.
  2. In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, and thyme.
  3. Rub the spice mixture all over the turkey breast for even coverage.
  4. Preheat your smoker to 225°F (107°C) using your choice of wood chips.
  5. Place the turkey breast in the smoker, skin side up.
  6. Use a meat thermometer to check the internal temperature, aiming for 165°F (74°C).
  7. Once cooked, remove the turkey from the smoker and wrap it loosely in aluminum foil. Let it rest for at least 15 minutes.
  8. After resting, slice the turkey breast against the grain and serve.

Notes

Brine the turkey overnight for added moisture and flavor. Experiment with different wood chips for your favorite flavor combination.
