Ingredients

Main
  • 2 cups sushi rice
  • 2 ½ cups water
  • 1 lb sushi-grade tuna diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha optional
  • 2 tablespoons green onions chopped
  • Vegetable oil for frying
  • Sesame seeds for garnish

Equipment

  • Medium saucepan
  • Frying pan
  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Spatula

Method

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to low heat and cover, cooking for about 18 minutes.
  3. While the rice cooks, mix the diced tuna, soy sauce, sesame oil, rice vinegar, and sriracha in a bowl.
  4. Once the rice is cooked, let it sit covered for a few minutes, then fluff it with a fork.
  5. Using wet hands, take a portion of rice and form it into small rectangular cakes.
  6. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the rice cakes and fry until golden brown on each side, about 2-3 minutes.
  7. Once crispy, place the rice cakes on a plate and top each with the marinated tuna mixture.
  8. Sprinkle with chopped green onions and sesame seeds. Serve immediately.
