  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1 1/4 cups mascarpone cheese
  • 1 cup brewed espresso
  • 2 tablespoons coffee liqueur optional

  • Cocoa powder for dusting

Equipment

  • Electric mixer or whisk
  • 9x9 inch baking dish
  • Spatula
  • Measuring cups and spoons

Method

  1. Brew a cup of strong espresso and let it cool.
  2. In a mixing bowl, whisk together the egg yolks and sugar until pale and creamy.
  3. In a saucepan, heat the milk over medium heat until just simmering.
  4. Gradually whisk the hot milk into the egg yolk mixture, stirring constantly.
  5. Return the mixture to the saucepan and cook over low heat, stirring until it thickens slightly.
  6. Transfer the custard to a bowl and let it cool completely.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Once the custard is cool, fold in the mascarpone cheese and whipped cream gently.
  9. Dip ladyfingers in the espresso and layer them in the baking dish.
  10. Spread half of the mascarpone mixture over the ladyfingers.
  11. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  12. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  13. Before serving, dust with cocoa powder.
