Ingredients

Main
  • 1 cup uncooked white rice
  • 4 cups milk whole or 2% for creaminess
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon plus extra for serving
  • 2 large eggs beaten (optional for richness)

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Serving bowls

Method

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, milk, sugar, and salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring frequently.
  4. Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes.
  5. Stir the pudding every few minutes to keep it creamy and prevent sticking.
  6. When the rice is tender, stir in the vanilla extract and cinnamon.
  7. If using, temper the beaten eggs with a bit of the hot mixture before adding it in.
  8. Once thickened to your liking, remove from heat and let it cool slightly before serving.

Notes

Serve warm or chilled. Garnish with extra cinnamon, fresh berries, or whipped cream if desired.
