Main
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup strong brewed coffee
  • 1/2 cup coffee liqueur optional
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Equipment

  • Mixing bowls
  • Whisk or electric mixer
  • 9x13 inch baking dish
  • Rubber spatula
  • Shallow dish for coffee

Method

  1. Brew 1 cup of strong coffee and let it cool completely.
  2. In a mixing bowl, whisk 6 large egg yolks with 3/4 cup granulated sugar until pale and creamy, about 5 minutes.
  3. Heat 2/3 cup milk in a saucepan over medium heat until just bubbling, about 3 minutes.
  4. Gradually whisk the hot milk into the egg yolk mixture to create a smooth custard.
  5. Return the custard to the saucepan and cook over low heat, stirring constantly, until thickened, about 5 minutes.
  6. In a separate bowl, whip 1 1/4 cups heavy cream until stiff peaks form.
  7. Gently fold 1 cup mascarpone cheese into the whipped cream until smooth.
  8. Dip each of the 24 ladyfinger cookies briefly into the cooled coffee and arrange a layer in the baking dish.
  9. Spread half of the mascarpone mixture over the ladyfingers and repeat with another layer of dipped ladyfingers and remaining cream.
  10. Dust the top with cocoa powder and refrigerate for at least 4 hours or overnight before serving.
