Ingredients

For the Dough
  • 2 cups all-purpose flour
For the Filling
  • 1 pound ground beef
  • 1 pound Italian sausage casings removed
  • 1 cup marinara sauce plus more for serving
  • 2 cups cooked ziti
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Equipment

  • Mixing bowls
  • Rolling pin
  • 9-inch springform pan
  • Large pot for boiling pasta
  • Skillet for cooking meat and sauce
  • Oven
  • Cooking spray or oil

Method

  1. In a large bowl, combine the flour and a pinch of salt. Gradually add water until a dough forms, then knead for about 5 minutes until smooth.
  2. On a floured surface, roll out the dough into a large circle, about 1/4-inch thick.
  3. In a skillet over medium heat, cook the ground beef and Italian sausage until browned. Drain excess fat and stir in the marinara sauce.
  4. In a large bowl, combine the cooked ziti, ricotta cheese, mozzarella cheese, Parmesan cheese, and seasonings.
  5. Grease the springform pan and line the bottom with the rolled-out dough, leaving excess dough hanging over the edges. Layer the filling and meat mixture into the pan.
  6. Fold the excess dough over the top of the filling to seal everything inside. Pinch the edges to secure it tightly.
  7. Preheat your oven to 375°F (190°C). Bake the Timpano for about 1 hour or until the crust is golden brown.
  8. Let the Timpano cool for at least 15 minutes before removing it from the springform pan. Serve with extra marinara sauce on the side.

Notes

Allow the Timpano to rest after baking; this allows the layers to set and makes slicing easier.
