Ingredients

Main
  • 1 lb beef or pork cut into cubes
  • 4 cups water
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar or brown sugar
  • 4 cloves garlic minced
  • 1 onion sliced
  • 1 star anise
  • 1 cinnamon stick
  • 1 teaspoon black peppercorns
  • 2 green onions chopped
  • Fresh cilantro for garnish

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Knife and cutting board
  • Serving bowls

Method

  1. Start by cutting your meat into bite-sized cubes.
  2. In a large pot, heat a bit of oil over medium heat. Add the minced garlic and sliced onion, cooking until fragrant and translucent.
  3. Add the meat to the pot, stirring occasionally until browned on all sides.
  4. Pour in the water, soy sauce, and fish sauce.
  5. Add the palm sugar to the pot and stir until dissolved.
  6. Add the star anise, cinnamon stick, and black peppercorns.
  7. Bring the mixture to a boil, then reduce to low heat and cover. Let it simmer for about 1.5 hours until the meat is tender.
  8. Once cooked, remove from heat and discard the whole spices. Serve hot, garnished with chopped green onions and fresh cilantro.

Notes

The longer you simmer, the more flavorful your broth will be.
