Ingredients

Main
  • 4 slices bacon diced
  • 1 medium onion chopped
  • 2 stalks celery diced
  • 2 medium potatoes peeled and diced
  • 2 cans 6.5 oz each chopped clams, with juice
  • 2 cups clam juice or seafood stock
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Cutting board and knife
  • Can opener

Method

  1. In a large pot, cook the diced bacon over medium heat until crispy.
  2. Remove the bacon and set aside, leaving the drippings in the pot.
  3. Sauté the chopped onion and diced celery until softened, about 5 minutes.
  4. Add the diced potatoes to the pot and stir to combine.
  5. Pour in the clam juice and the juice from the canned clams.
  6. Bring the mixture to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
  7. In a small bowl, mix the flour with a bit of water to create a slurry. Stir this into the chowder to thicken it.
  8. Stir in the heavy cream, thyme, salt, and pepper.
  9. Return the cooked bacon to the pot and garnish with fresh parsley.
  10. Serve warm in bowls with crusty bread.
