- Remove outer leaves and cut the green cabbage into quarters; thinly slice into ribbons.
- Cut the red cabbage into quarters and slice into thin ribbons, using a mandoline if desired.
- Shred the carrots into thin matchsticks using a box grater or julienne peeler.
- Core the apples and thinly slice or julienne; toss immediately with a squeeze of lemon juice to prevent browning.
- Combine sliced green cabbage, red cabbage, carrots, apples, cranberries, and parsley in a large mixing bowl.
- In a medium bowl, whisk together apple cider vinegar, maple syrup, olive oil, and Dijon mustard until emulsified.
- Add salt, black pepper, ground cinnamon, and cayenne to the dressing and whisk again to combine.
- Pour the dressing over the slaw mixture and toss gently with a wooden spoon until evenly coated.
- Cover the bowl and refrigerate for at least 2 hours before serving to allow flavors to meld.
