  • 8 fresh jalapeños halved lengthwise and seeded
  • 4 ounces cream cheese softened
  • 1 cup cooked brisket finely shredded or minced
  • 3/4 cup sharp cheddar cheese shredded
  • 8 slices bacon cut in half
  • 1 can 8 ounces refrigerated crescent roll dough
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper or aluminum foil.
  2. Wash the jalapeños, pat dry, cut each in half lengthwise, and remove seeds and membranes.
  3. In a bowl, combine the softened cream cheese, shredded brisket, cheddar cheese, smoked paprika, garlic powder, salt, and pepper.
  4. Spoon or pipe the filling into each jalapeño half, mounding slightly without overstuffing.
  5. Wrap each filled jalapeño with a half slice of bacon, tucking the ends underneath to secure.
  6. Remove crescent roll dough from the can, separate triangles along perforations, and pinch seams together to form eight larger triangles.
  7. Place a bacon-wrapped jalapeño in the center of each dough triangle and wrap the dough around, pinching seams closed.
  8. Arrange the wrapped poppers seam-side down on the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 18 to 22 minutes, until the dough is deep golden brown and the bacon is cooked through.
  10. Let the Texas Twinkies rest on the baking sheet for 3 to 5 minutes before serving to allow the filling to set.

Notes

These can be assembled and frozen; bake directly from frozen at 375°F, adding 5 minutes to the cooking time.
