Main
  • 2 lbs pork shoulder sliced thinly
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 cloves garlic minced
  • 1 onion chopped
  • 3 dried guajillo chiles seeds removed
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 8 corn tortillas
  • Fresh cilantro for garnish
  • Pineapple slices for garnish
  • Lime wedges for serving

Equipment

  • Grill or stovetop skillet
  • Food processor or blender
  • Mixing bowl
  • Knife and cutting board
  • Tongs

Method

  1. In a food processor, combine orange juice, pineapple juice, garlic, onion, guajillo chiles, cumin, oregano, salt, and pepper.
  2. Slice the pork shoulder thinly and place it in a mixing bowl.
  3. Pour the marinade over the pork, ensuring each piece is well-coated, then refrigerate for at least 30 minutes.
  4. Heat your grill or skillet over medium-high heat.
  5. Add the marinated pork to the skillet or grill in a single layer. Cook for about 8-10 minutes on each side until nicely browned and cooked through.
  6. Once cooked, remove the pork from the heat and let it rest for a few minutes.
  7. Chop the pork into small pieces.
  8. Warm the corn tortillas on a dry skillet for a minute on each side.
  9. Place a portion of the chopped pork on each tortilla. Top with fresh cilantro, pineapple slices, and a squeeze of lime.
