Main
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup biscuit dough about 1 can
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced olives optional
  • 1/4 cup chopped green onions optional

Equipment

  • 12-cup muffin tin
  • Mixing bowl
  • Skillet
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Cooling rack

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it up as it cooks.
  3. Stir in the taco seasoning and follow the package instructions, typically adding some water.
  4. Grease the muffin tin lightly.
  5. Open the biscuit dough and cut each piece into smaller rounds, pressing them into the bottom and up the sides of the muffin cups.
  6. Fill each dough-lined muffin cup with the seasoned meat mixture, leaving space for cheese and toppings.
  7. Sprinkle shredded cheddar cheese generously on top.
  8. Place the muffin tin in the preheated oven and bake for 20 minutes until golden brown and bubbly.
  9. Let the Taco Cupcakes cool for a few minutes before removing them from the tin.
