- Preheat the oven to 400°F (200°C) and grease an 8-inch square baking pan or 9-inch cast iron skillet.
- In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
- In a large bowl, whisk the sweet potato puree, eggs, melted butter, milk, and vanilla extract until smooth.
- Pour the dry ingredients into the wet ingredients and gently fold with a spoon or spatula until just combined.
- Transfer the batter to the prepared pan and spread it evenly with a spatula.
- Bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool in the pan for 10 minutes at room temperature.
- Run a knife around the edges, turn the cornbread out onto a cooling rack or cutting board, slice into wedges or squares, and serve warm.
