Ingredients

Main
  • 4 cups apricots mashed or chopped
  • 5 cups sugar
  • 1 box Sure Jell pectin
  • 1 cup water
  • 1/4 cup lemon juice

Equipment

  • Large pot
  • Wooden spoon
  • Jars and lids
  • Canner or water bath
  • Jar lifter
  • Measuring cups
  • Food processor or masher

Method

  1. Start by sterilizing your jars and lids in boiling water.
  2. In a large bowl, mash or chop the apricots until you have 4 cups.
  3. In a large pot, combine the mashed apricots, lemon juice, and water.
  4. Stir in the Sure Jell pectin and allow it to sit for 10 minutes.
  5. Heat the mixture over medium-high heat, stirring constantly until it reaches a rolling boil.
  6. Once boiling, stir in the sugar all at once.
  7. Return to a full boil for exactly 1 minute, stirring constantly to dissolve the sugar.
  8. To check if your jam is set, place a spoonful on a cold plate and let it sit for a minute.
  9. If it wrinkles when pushed, it's ready to jar.
  10. Carefully ladle the hot jam into the prepared jars, leaving 1/4 inch of headspace.
  11. Wipe the rims with a clean cloth to ensure a good seal.
  12. Process the jars in a boiling water bath for 5-10 minutes.
