  • 2 cans 5 oz each tuna, drained and flaked
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped celery
  • 2 tablespoons diced red onion
  • 1 tablespoon dill relish
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 six-inch submarine rolls
  • 4 leaves lettuce
  • 4 tomato slices
  • 8 cucumber slices
  • 2 slices American or Swiss cheese optional
  • 8 banana pepper slices optional

Method
 

  1. Open the 2 cans of tuna and drain thoroughly by pressing the lid into each can to remove excess liquid.
  2. Transfer tuna to a mixing bowl and use a fork to break into small, even flakes.
  3. Add 1/4 cup mayonnaise to the flaked tuna and mix with a fork until evenly coated.
  4. Stir in 1/4 cup chopped celery, 2 tablespoons red onion, and 1 tablespoon dill relish until well combined.
  5. Season with 1/2 teaspoon lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper; fold gently and adjust seasoning to taste.
  6. Slice open the submarine rolls and place cut-side up; toast in a toaster oven at 375°F (190°C) for 2 to 3 minutes until warm and lightly crispy.
  7. Divide tuna mixture evenly between the rolls, spreading about half on each bottom half.
  8. Layer 2 lettuce leaves, 2 tomato slices, and 4 cucumber slices on each sandwich.
  9. If desired, top each sandwich with 1 slice cheese and 4 banana pepper slices.
  10. Close each sandwich, cut in half if desired, and serve immediately while the bread is warm.

Notes

For best results, toast the bread just before assembly to prevent sogginess and add extra crunch.
