Ingredients

For the Pasta
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
For the Filling
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach cooked and chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For Serving
  • Your favorite pasta sauce
  • Fresh basil leaves for garnish

Equipment

  • Mixing bowl
  • Pasta machine or rolling pin
  • Sharp knife or pastry cutter
  • Fork for sealing
  • Large pot for boiling
  • slotted spoon

Method

  1. In a mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
  2. Using a fork, slowly incorporate the flour into the eggs until a rough dough forms. Knead the dough on a floured surface for about 10 minutes until smooth.
  3. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  4. In a bowl, mix the ricotta, Parmesan, chopped spinach, garlic powder, salt, and pepper.
  5. Divide the dough into four pieces. Roll out each piece using a pasta machine or rolling pin until thin.
  6. Place small dollops of filling about 2 inches apart on one sheet of pasta. Moisten the edges with water, then place another sheet of pasta on top and press to seal.
  7. Using a sharp knife or pastry cutter, cut between the filling to create individual ravioli and press the edges with a fork to seal.
  8. Bring a large pot of salted water to a boil. Cook the ravioli for 3-5 minutes until they float to the surface.

Notes

Ensure ravioli are well sealed to prevent filling from leaking during cooking.
