Ingredients

Main
  • 3-4 pounds pork loin roast
  • 1 cup breadcrumbs
  • 1/2 cup cooked sausage crumbled
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil

Equipment

  • Roasting pan
  • Sharp knife
  • Cutting board
  • Meat thermometer
  • Aluminum foil

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the breadcrumbs, cooked sausage, onion, garlic, parsley, thyme, salt, and pepper.
  3. Pour in the chicken broth and mix gently until the ingredients are well combined.
  4. Using a sharp knife, make a deep slit down the center of the pork loin, creating a pocket for the stuffing.
  5. Fill the pocket with the prepared stuffing, packing it in gently.
  6. Use kitchen twine to tie the pork loin at intervals.
  7. In a large skillet, heat olive oil over medium-high heat and sear the roast on all sides until browned, about 3-4 minutes per side.
  8. Transfer the seared roast to a roasting pan and cook in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Let the roast rest for at least 10 minutes before slicing.

Notes

This roast pairs beautifully with garlic mashed potatoes, roasted seasonal vegetables, apple sauce, and green salad.
