Ingredients

Main
  • 2 lbs beef stew meat cut into 1-inch pieces
  • 4 cups beef broth
  • 3 medium potatoes peeled and diced
  • 2 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Equipment

  • Crock pot
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon for stirring

Method

  1. Begin by prepping all your ingredients. Chop the vegetables and cut the beef into bite-sized pieces for even cooking.
  2. If you want extra flavor, brown the beef in a skillet before adding it to the crock pot.
  3. Layer the beef, potatoes, carrots, onion, and garlic in the crock pot.
  4. Pour the beef broth over the ingredients and add the tomato paste, thyme, and rosemary.
  5. Generously season with salt and pepper to taste.
  6. Give everything a good stir to mix the ingredients and distribute the seasonings evenly.
  7. Cover the crock pot and set it to low for 8 hours or high for 4 hours.
  8. About 30 minutes before serving, stir in the frozen peas.
