Main
  • 2 ribeye steaks about 1 inch thick
  • 4 large russet potatoes peeled and cut into fries
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • Fresh parsley chopped, for garnish
  • Butter optional, for finishing the steak

Equipment

  • Cast iron skillet or frying pan
  • Large pot for frying
  • Thermometer (optional)
  • Sharp knife for slicing
  • Cutting board
  • Paper towels

Method

  1. Peel and cut the potatoes into fries.
  2. Soak the cut fries in cold water for at least 30 minutes.
  3. In a large pot, heat oil over medium-high heat until it reaches 350°F.
  4. Carefully add the fries to the hot oil in batches and fry for about 5 minutes until they are light golden.
  5. Remove the fries from the oil and drain them on paper towels. Season with salt while they are hot.
  6. In a cast iron skillet, heat olive oil over high heat until shimmering.
  7. Season the steaks with salt and pepper. Add them to the skillet and sear for about 4-5 minutes on each side for medium-rare.
  8. Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Notes

Customize the seasoning and sauces to your liking. For a kick, add spices like smoked paprika to the fries.
