  • 2 slices of bread sourdough-style artisan bread preferred
  • 2 tablespoons unsalted butter divided
  • 1.5 ounces Gruyere cheese about 2 thin slices
  • 1.5 ounces sharp white cheddar cheese about 2 thin slices
  • Salt and black pepper to taste optional

  • Skillet or griddle (non-stick or cast iron)
  • Spatula or turner
  • Cutting board
  • Knife for slicing and spreading

Method
 

  1. Pull out your butter, cheese, and bread and set everything on your work surface.
  2. Set your skillet to medium heat and let it warm for about 2 minutes.
  3. Take 1 tablespoon of butter and spread it evenly across one side of your first bread slice.
  4. Lay the buttered slice down into your preheated skillet with the buttered side making contact with the hot surface.
  5. While the first side toasts for 2 to 3 minutes, place your Gruyere slices first, then your white cheddar on top of the bread that's still in the pan.
  6. Take your second tablespoon of butter and spread it generously over one side of your second bread slice.
  7. When the first slice is golden brown (about 2 to 3 minutes), carefully flip it onto a plate with the cheese facing up. Place your buttered second slice on top of the cheese, buttered side facing outward.
  8. Transfer your assembled sandwich back into the skillet with the second slice of bread now facing down. Cook for another 2 to 3 minutes until this side is golden brown and crispy.
  9. Transfer your sandwich to a clean plate and let it rest for 1 minute before cutting diagonally.

Notes

Keep your heat at medium, not medium-high, to allow the cheese to melt completely while the bread browns evenly. Press gently on the sandwich while it cooks to encourage cheese contact with the bread. If your cheese isn't melting fast enough, lower the heat slightly or tent the sandwich with foil. Fresh bread works better than day-old bread. Cut the sandwich diagonally for a more professional presentation.
