Method
- Combine flour, sugar, baking powder, and salt in a large mixing bowl and whisk to distribute the baking powder evenly.
- Create a well in the center of the dry ingredients and add the shortening and warm water, stirring with a wooden spoon until a shaggy dough forms.
- Turn the dough out onto a floured work surface and knead for 2 to 3 minutes until smooth and slightly elastic.
- Place the dough back in the bowl and let it rest for 10 minutes at room temperature.
- Divide the dough into 12 equal pieces and gently stretch each into a 1/4-inch-thick oval or round shape.
- Pour oil into a skillet to a depth of 1 inch and heat to 375°F (190°C) using a deep-fry thermometer.
- Fry 2 to 3 pieces of dough at a time for 1 to 2 minutes per side, until golden brown and puffed.
- Remove the bread with a slotted spoon, drain on paper towels set over a wire rack, and serve warm.
