Ingredients

Main
  • 2 cups fresh spinach chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 3 large eggs separated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 cup grated cheese Gruyere or cheddar

Equipment

  • Oven-safe baking dish
  • Large mixing bowl
  • Whisk
  • Spatula
  • Medium saucepan
  • Measuring cups and spoons

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, melt the butter over medium heat and add the chopped spinach. Cook until wilted, about 2-3 minutes.
  3. Add the flour to the spinach mixture and stir for 1-2 minutes to create a roux.
  4. Slowly whisk in the milk, stirring continuously until the mixture thickens, about 3-5 minutes.
  5. Separate the egg yolks from the whites, placing the yolks in a large bowl and the whites in a separate mixing bowl.
  6. Stir the cooked spinach mixture, salt, pepper, nutmeg, and cheese into the egg yolks.
  7. Using a clean whisk, whip the egg whites until stiff peaks form.
  8. Gently fold the egg whites into the spinach mixture until just combined.
  9. Pour the mixture into a greased baking dish and bake for 30 minutes or until puffed and golden brown.
