Ingredients

Main
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 1 bell pepper diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn fresh or frozen
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper adjust for heat
  • Salt and pepper to taste
  • 1 avocado sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Serving bowls

Method

  1. Start by rinsing the quinoa under cold water to remove the bitter coating.
  2. In a pot, combine the rinsed quinoa and vegetable broth. Bring it to a boil, then reduce to a simmer and cover, cooking for about 15 minutes until fluffy.
  3. In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes, stirring occasionally.
  4. Stir in minced garlic and diced bell pepper, cooking for another 3 minutes to build the aromatic base.
  5. Add the black beans and corn to the pot, mixing well. Allow to heat through for about 5 minutes.
  6. Sprinkle in chili powder, cumin, cayenne, salt, and pepper. Stir well to ensure all ingredients are coated with the spices.
  7. Once the quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Mix until everything is well incorporated.
  8. Divide the spicy bowl mixture into serving bowls. Top with avocado slices, fresh cilantro, and a wedge of lime for an extra zing.
