Ingredients

For the Sauce
  • 2 pounds fresh tomatoes peeled and chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh basil or 1/2 teaspoon dried
  • 1 tablespoon balsamic vinegar optional

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Chopping board
  • Sharp knife
  • Measuring cups and spoons
  • Can opener (if using canned tomatoes)

Method

  1. Start by peeling your fresh tomatoes. Blanch them in boiling water for a minute, then transfer to ice water for easy peeling.
  2. Chop the onion and mince the garlic.
  3. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Then, add the minced garlic and sauté for an additional minute.
  5. Stir in the prepared tomatoes, mixing them well with the onion and garlic.
  6. Add sugar, salt, pepper, oregano, and basil to the pot.
  7. Bring the sauce to a gentle boil, then reduce the heat and let it simmer for 25-30 minutes.
  8. Stir in the balsamic vinegar if using.
  9. Taste the sauce and adjust the seasoning if needed. Serve it over your favorite pasta.

Notes

For a smoother sauce, use an immersion blender to blend the sauce to your desired consistency.
