Ingredients

Main
  • 1 lb of chicken breast cut into cubes
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Pita bread for serving
  • Vegetables bell peppers, onions, etc., optional

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Skewers (soaked if wooden)
  • Whisk
  • Meat thermometer

Method

  1. In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper.
  2. Add the chicken cubes to the marinade and mix well to coat each piece. Let it marinate for at least 30 minutes, or up to overnight for deeper flavor.
  3. Heat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  5. Place the skewers on the grill and cook for about 10 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  7. While the chicken rests, warm your pita bread on the grill for about 1 minute on each side.
  8. Serve the grilled Souvlaki with warm pita and your favorite toppings.

Notes

For extra flavor, grill some lemon halves alongside the chicken to squeeze over at the end. Serve with tzatziki and fresh veggies.
