Ingredients

Main
  • 1 tablespoon vegetable oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 4 cups vegetable or chicken broth
  • 1 block soft tofu cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon gochugaru Korean red pepper flakes
  • 2 green onions sliced
  • Salt and pepper to taste

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Bowl for serving

Method

  1. Heat the vegetable oil in a large pot over medium heat. Sauté the chopped onion, garlic, and ginger until fragrant, about 3 minutes.
  2. Pour in the vegetable or chicken broth and bring it to a boil.
  3. Gently add the cubed soft tofu to the boiling broth, being careful not to break the tofu.
  4. Add soy sauce and gochugaru, stirring to combine.
  5. Lower the heat and let the soup simmer for about 5-7 minutes.
  6. Taste and adjust seasoning with salt and pepper.
  7. Stir in the sliced green onions just before serving.
  8. Pour the soup into bowls and serve hot.

Notes

For extra flavor, try adding a splash of sesame oil just before serving.
