  • 1 cup carrots sliced
  • 1 cup mushrooms sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Equipment

  • Large skillet or saute pan
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Cutting board
  • Knife

Method

  1. Start by cutting the chicken thighs into bite-sized chunks.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chicken to the skillet and season with salt and pepper.
  4. Brown the chicken on all sides until golden.
  5. Remove the chicken from the skillet.
  6. In the same skillet, add the onions, garlic, carrots, and mushrooms.
  7. Sauté the vegetables until softened.
  8. Pour in the chicken broth, scraping up the brown bits from the bottom of the pan.
  9. Add the chicken back into the skillet along with the dried thyme.
  10. Stir in the heavy cream and bring to a gentle simmer.
  11. Once the sauce thickens slightly, taste and adjust the seasoning.

Notes

For an extra layer of flavor, let the fricassee simmer a bit longer and serve it over a bed of rice or noodles.
