Ingredients

Main
  • 1 pound shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup celery finely chopped
  • 1/4 cup green onions sliced
  • Salt and pepper to taste
  • 4 soft rolls or buns

Equipment

  • Large pot
  • Colander
  • Mixing bowl
  • Skillet
  • Spatula
  • Serving plates

Method

  1. In a large pot of boiling salted water, add the shrimp and cook for 2-3 minutes until they turn pink.
  2. Once cooked, drain the shrimp in a colander and run under cold water to stop the cooking process.
  3. In a mixing bowl, combine mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth.
  4. Add the chopped celery and sliced green onions to the dressing and mix well.
  5. Gently fold in the cooled shrimp with the dressing mixture.
  6. In a skillet, lightly toast the rolls until golden brown on both sides.
  7. Divide the shrimp mixture equally among the toasted rolls.
  8. Serve the shrimp rolls immediately, garnished with extra green onions if desired.

Notes

For extra flavor, add a dash of hot sauce to the shrimp mixture.
