  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 red bell pepper diced
  • 1 cup cooked black beans warmed
  • 1 cup cooked rice white or brown
  • 1 cup corn fresh or frozen
  • 4 large flour tortillas
  • 1 lime cut into wedges
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 1/2 cup shredded cheese optional
  • 1/4 cup fresh cilantro optional
  • Salsa or hot sauce for serving

Method
 

  1. Pat the shrimp dry with paper towels and season with salt, black pepper, cumin, and chili powder.
  2. Wrap the flour tortillas in a damp paper towel and microwave for 30 seconds or warm in a dry skillet over medium heat for 20 seconds per side.
  3. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  4. Add the shrimp in a single layer and cook for 2 minutes without stirring, then flip and cook for another 2 minutes until pink and opaque.
  5. Push the shrimp to one side, add the minced garlic, and cook for 30 seconds until fragrant, then toss with the shrimp and remove from heat.
  6. Arrange warm tortillas, rice, black beans, corn, cheese, cilantro, and shrimp mixture into a filling station.
  7. Place 1/4 cup rice, 1/4 cup beans, 1/4 cup corn, and 1/4 of the shrimp mixture down the center of a tortilla, then sprinkle with cheese and cilantro.
  8. Fold the sides of the tortilla in by about 2 inches and roll away from you tightly to form a burrito, then place seam-side down.
  9. Serve immediately with lime wedges, salsa, and hot sauce.

Notes

Assemble burritos ahead of time and wrap tightly in foil; reheat in a 350°F oven for 10 minutes until warmed through.
