- Pat the shrimp dry with paper towels and season with salt, black pepper, cumin, and chili powder.
- Wrap the flour tortillas in a damp paper towel and microwave for 30 seconds or warm in a dry skillet over medium heat for 20 seconds per side.
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the shrimp in a single layer and cook for 2 minutes without stirring, then flip and cook for another 2 minutes until pink and opaque.
- Push the shrimp to one side, add the minced garlic, and cook for 30 seconds until fragrant, then toss with the shrimp and remove from heat.
- Arrange warm tortillas, rice, black beans, corn, cheese, cilantro, and shrimp mixture into a filling station.
- Place 1/4 cup rice, 1/4 cup beans, 1/4 cup corn, and 1/4 of the shrimp mixture down the center of a tortilla, then sprinkle with cheese and cilantro.
- Fold the sides of the tortilla in by about 2 inches and roll away from you tightly to form a burrito, then place seam-side down.
- Serve immediately with lime wedges, salsa, and hot sauce.
Notes
Assemble burritos ahead of time and wrap tightly in foil; reheat in a 350°F oven for 10 minutes until warmed through.
