  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Equipment

  • Large mixing bowl
  • Medium saucepan
  • Colander
  • Sharp knife
  • Cutting board
  • Measuring spoons

Method

  1. Start by bringing a medium saucepan of water to a boil.
  2. Once the water is boiling, add the shrimp and cook for 2-3 minutes until they turn pink.
  3. Drain the shrimp in a colander and rinse under cold water to stop the cooking process.
  4. While the shrimp cools, chop the avocados, tomatoes, red onion, and cilantro.
  5. In a large mixing bowl, combine the shrimp, diced avocado, tomatoes, onion, and cilantro.
  6. Drizzle lime juice and olive oil over the salad, then season with salt and pepper to taste.
  7. Gently toss the salad to combine all ingredients without mashing the avocado.
  8. Transfer the salad to serving plates and enjoy right away.
