  • 1 cup carrots diced
  • 1 cup peas frozen or fresh
  • 1 cup onions chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1/2 cup milk
  • 4 tbsp butter

Equipment

  • Large skillet
  • Pot for boiling potatoes
  • Colander
  • Mixing bowl
  • Baking dish
  • Masher or electric mixer

Method

  1. Place the cubed potatoes in a large pot and cover with cold water.
  2. Bring the water to a boil, reduce to a simmer, and cook for 15-20 minutes or until potatoes are fork-tender.
  3. Preheat the oven to 400°F (200°C).
  4. While potatoes are cooking, brown the ground lamb or beef in a large skillet over medium heat until fully cooked.
  5. Add chopped onions, carrots, and garlic to the skillet and sauté for about 5 minutes until onions are translucent.
  6. Stir in tomato paste, Worcestershire sauce, and thyme, then pour in beef broth and simmer for 3-5 minutes.
  7. Season the meat mixture with salt and pepper to taste and fold in the peas.
  8. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy.
  9. Spread the meat mixture into a baking dish and top evenly with the mashed potatoes.
  10. Bake in the preheated oven for 20 minutes or until the potato topping is golden brown.

Notes

For an extra crispy topping, broil the Shepherd's Pie under the broiler for 2-3 minutes after baking.
