Ingredients

Main
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Green onions for garnish
  • Sesame seeds for garnish

Equipment

  • Large skillet or frying pan
  • Measuring cups and spoons
  • Spatula or wooden spoon
  • Cutting board
  • Knife

Method

  1. Begin by cutting the chicken thighs into bite-sized pieces.
  2. In a bowl, combine soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Let them sit for at least 10 minutes.
  4. Place your skillet over medium-high heat and add a drizzle of sesame oil.
  5. Add the marinated chicken to the hot skillet, spreading it out in a single layer. Cook until browned and cooked through, about 8-10 minutes.
  6. Once the chicken is cooked through, pour in the reserved marinade. Stir in the cornstarch slurry and cook for another 2-3 minutes until the sauce thickens.
  7. Remove from heat and garnish with sliced green onions and sesame seeds.
  8. Serve the teriyaki chicken over rice or alongside steamed vegetables.

Notes

For an even richer flavor, grill the chicken instead of pan-frying.
