Ingredients

Main
  • 4-5 pounds of pork shoulder or pork loin
  • 4 cloves of garlic minced
  • 2 tablespoons of salt
  • 1 tablespoon of black pepper
  • 2 tablespoons of caraway seeds
  • 1 tablespoon of dried thyme
  • 1 cup of vegetable broth
  • 2 tablespoons of olive oil
  • 1 onion quartered

Equipment

  • Roasting pan
  • Meat thermometer
  • Sharp knife
  • Cutting board
  • Aluminum foil

Method

  1. Pat the pork shoulder dry with paper towels.
  2. In a small bowl, combine the minced garlic, salt, pepper, caraway seeds, and thyme. Rub this mixture all over the pork.
  3. Preheat your oven to 350°F (175°C).
  4. In a large roasting pan, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side.
  5. Place the quartered onion around the pork in the roasting pan and pour the vegetable broth into the pan.
  6. Cover the pan with aluminum foil and roast for 2 hours.
  7. After 2 hours, remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30-45 minutes.
  8. Use a meat thermometer to check that the internal temperature reaches 145°F (63°C).
  9. Allow the meat to rest for 15 minutes before slicing.

Notes

Serve with hearty sides like German potato dumplings or red cabbage salad.
