Ingredients

Main
  • 1 pound fresh mushrooms cremini, button, or a mix, cleaned and halved
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh thyme or 1 teaspoon dried
  • 1 tablespoon balsamic vinegar optional but recommended
  • Pinch of garlic powder optional

Equipment

  • Large stainless steel skillet or saute pan
  • Sharp chef's knife
  • Cutting board
  • Wooden spoon or silicone spatula
  • Measuring spoons
  • Paper towels
  • Garlic mincer (optional)

Method

  1. Wipe mushrooms clean with a damp paper towel and cut each mushroom in half lengthwise.
  2. Use fresh paper towels to pat mushroom halves completely dry on both sides to ensure proper browning.
  3. Place a large skillet over medium-high heat for about 2 minutes until hot, then add 1 tablespoon of butter and 1 tablespoon of olive oil, swirling to coat the pan.
  4. Arrange mushroom halves in a single layer, flat side down, leaving space between each piece and cook undisturbed for 4 to 5 minutes until deep golden-brown.
  5. Flip the mushrooms, add the remaining 2 tablespoons of butter, and cook for another 2 to 3 minutes until the second side is browned and butter is foaming.
  6. Reduce heat to medium and add minced garlic, stirring constantly for about 30 seconds until fragrant; then sprinkle in kosher salt, black pepper, and fresh thyme and stir briefly.
  7. Remove the pan from heat and stir in chopped parsley and balsamic vinegar if using; taste and adjust seasoning with additional salt or pepper.

Notes

Do not overcrowd the pan; letting mushrooms sit undisturbed ensures optimal browning.
