  • 1/2 cup breadcrumbs plus extra for coating
  • 1/4 cup green onions finely chopped
  • 1/4 cup mayonnaise
  • 1 large egg beaten
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Equipment

  • Mixing bowl
  • Fork
  • Frying pan
  • Spatula
  • Measuring cups and spoons
  • Cooking thermometer (optional)

Method

  1. Start by draining the can of salmon and flaking it with a fork in a mixing bowl.
  2. Add breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, lemon juice, garlic powder, salt, and pepper to the bowl.
  3. Using your hands, shape the mixture into small patties, about 2 to 3 inches wide.
  4. Lightly coat each patty in additional breadcrumbs.
  5. In a frying pan, heat about 1/4 inch of oil over medium heat.
  6. Carefully place the patties in the hot oil, cooking in batches if necessary.
  7. Fry for about 3 to 4 minutes on each side until golden brown and crispy.
  8. Once cooked, remove the croquettes and let them drain on paper towels.
  9. Serve your croquettes warm with your favorite dipping sauce.

Notes

For extra flavor, try adding chopped herbs like dill or parsley to the mixture.
