Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 1 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Equipment

  • Oven-safe skillet
  • Meat mallet or rolling pin
  • Mixing bowl
  • Sharp knife
  • Meat thermometer

Method

  1. Preheat your oven to 375°F (190°C).
  2. Using a meat mallet, gently pound each chicken breast to about 1/2 inch thickness.
  3. In a mixing bowl, combine the softened cream cheese, mozzarella, Parmesan, minced garlic, and parsley.
  4. Place a generous spoonful of the cheese mixture in the center of each chicken breast and fold the sides over the filling, securing with toothpicks.
  5. Season the outside of the chicken with salt and pepper.
  6. In an oven-safe skillet, heat olive oil over medium-high heat and sear the stuffed chicken for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, using a meat thermometer to check that the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for a few minutes after cooking before serving.

Notes

This stuffed chicken pairs beautifully with garlic mashed potatoes, steamed asparagus, or a Caesar salad.
