Ingredients

Main
  • 1 cup water
  • 1 cup granulated sugar
  • 1/4 cup fresh rosemary leaves about 10-12 sprigs

Equipment

  • Medium saucepan
  • Measuring cups
  • Measuring spoons
  • Fine mesh strainer
  • Glass jar or bottle for storage

Method

  1. In a medium saucepan, combine the water and sugar. Stir over medium heat until the sugar completely dissolves.
  2. Once the sugar dissolves, add the fresh rosemary leaves to the saucepan.
  3. Bring the mixture to a gentle simmer. Lower the heat to extract essential oils from the rosemary.
  4. Let the syrup simmer for about 10 minutes.
  5. Remove from heat and let it cool slightly, then strain to remove rosemary leaves.
  6. Pour the strained syrup into a clean glass jar or bottle.
  7. Allow the syrup to cool to room temperature before refrigerating.

Notes

Use the syrup within a month for the best flavor, and keep it refrigerated.
