- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and scrub the sweet potatoes under cool running water, then pat dry.
- Cut each potato lengthwise into quarters to make wedges.
- Place the wedges in a large mixing bowl and drizzle with 2 tablespoons olive oil; toss to coat.
- Season with 1 teaspoon sea salt, 1/2 teaspoon black pepper, and 1/4 teaspoon smoked paprika; toss to distribute evenly.
- Arrange the potato wedges in a single layer on the prepared baking sheet without overlapping.
- Roast in the preheated oven for 25 to 30 minutes, turning once halfway through, until golden brown and tender.
- While the potatoes roast, melt 3 tablespoons of the butter in a small saucepan over medium-low heat.
- Add the minced garlic and cook for about 30 seconds until fragrant, then remove from heat.
- Stir in the chopped thyme, chopped rosemary, and lemon zest; let the herb butter infuse for 2 minutes.
- Transfer the roasted potatoes to a serving platter and drizzle the herb butter over them.
- Taste and adjust seasoning with additional salt or pepper if needed, then serve immediately.
Notes
Serve immediately while hot to retain crispiness. Leftovers can be reheated in a 350°F oven for 10 to 12 minutes for best texture.
