  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 tablespoon thyme chopped
  • 1 cup beef broth

Equipment

  • Roasting pan
  • Meat thermometer
  • Sharp knife
  • Cutting board
  • Aluminum foil

Method

  1. Preheat the oven to 375°F (190°C).
  2. Pat the beef roast dry with paper towels.
  3. Rub the olive oil all over the roast and season with salt, pepper, garlic, rosemary, and thyme.
  4. Sear the roast in a hot skillet for about 3-4 minutes per side.
  5. Transfer the seared roast to a roasting pan.
  6. Pour beef broth around the roast in the pan.
  7. Insert a meat thermometer into the thickest part of the roast and roast until thermometer reads 135°F for medium-rare.
  8. Once done, remove the roast from the oven and cover loosely with aluminum foil.
  9. Let it rest for at least 15 minutes before slicing.

Notes

Letting the roast rest keeps it juicy and flavorful. Serve with sides like mashed potatoes and roasted vegetables.
