- Heat the olive oil or lard in a large skillet over medium heat for about 1 minute until shimmering.
- Add the diced onion and cook, stirring frequently, for 3 to 4 minutes until translucent and soft.
- Stir in the minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
- Add the ground cumin, chili powder, and smoked paprika and stir for about 30 seconds to bloom the spices.
- Pour in the drained and rinsed black beans and cook for 1 minute, stirring to coat them with the spiced oil.
- Add the reserved bean liquid or vegetable broth and stir to combine.
- Simmer the mixture uncovered for 5 to 7 minutes, stirring occasionally, until it thickens slightly.
- Mash the beans directly in the skillet with a potato masher for 3 to 5 minutes, stirring occasionally; adjust texture with more broth if needed.
- Taste and season with salt and black pepper to your liking before serving.
