Ingredients

Main
  • 2 large red bell peppers
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs like parsley or basil, for garnish

Equipment

  • Baking sheet
  • Food processor
  • Spatula
  • Measuring cups and spoons
  • Knife and cutting board

Method

  1. Preheat your oven to 450°F (230°C).
  2. Cut the peppers in half and remove the seeds and stems.
  3. Place the pepper halves on a baking sheet, skin side up. Drizzle with olive oil and roast for about 20 minutes, until the skins are blistered.
  4. Once roasted, remove them from the oven and let them cool for a few minutes.
  5. Transfer the cooled peppers to a food processor. Add cream cheese, sour cream, garlic, smoked paprika, salt, and pepper.
  6. Blend the mixture until it's creamy and smooth.
  7. Give your dip a taste and adjust the seasoning if necessary.
  8. Transfer the dip to a serving bowl and garnish with fresh herbs. Serve it with pita chips, vegetables, or crusty bread.

Notes

For added depth, try adding a squeeze of lemon juice before blending!
